Ingredients
- RUDI’S ORGANIC BAKERY® SPELT TORTILLAS
- 4 EGGS
- 2 CUPS WHITE CHEDDAR CHEESE
- 2 CUPS POTATOES, WASHED AND SLICED
- ¼ CUP CHIVES, CHOPPED
- ¼ CUP RED PEPPERS
- OPTIONAL: SAUSAGE, BACON
Step 1
Pre-heat oven to 425 degrees F.
Step 2
Grease a cast iron pan with olive oil.
Step 3
Place the tortilla in the pan and layer the potatoes, chives, peppers and cheese on top.
Step 4
Carefully crack each egg individually so the yolk doesn’t break on top of the cheese so they are evenly distributed around the skillet.
Step 5
Cook for 15-20 minutes until the eggs are done and the cheese is fully melted.
